Dry-Aged Tussock Sedge 100% Grass-fed Beef
Our Farm Store hours are Saturday 10am – 3pm and Thursday 1- 4pm.
We dry-age our 100% grassfed beef for what we feel is the perfect amount of time to tenderize and develop the flavors. Then our butchers cut, vacuum pack and flash freeze each piece so it will stay as tender and moist as it was on the bone. Vacuum sealed packages store well for a year in deep freeze until you need them. They also work well for sous vide cooking. Give the meat time to thaw before cooking. Then marinate, braise, grill, or slow-cook.
You can buy beef by the piece in our Farm Store. You can pre-order a Sampler Box or an 1/8th Beef in a Box for pick up during Farm Store hours. Both are an assortment of beef cuts at a more economical price than buying by the piece. Please contact us directly to buy a custom cut 1/2 or whole beef to your specifications.
Quantities of everything are limited. We sell beef only from the grass-fed animals raised on Tussock Sedge Farm. We coordinate with small, local slaughterhouses and butcheries, all of whom have full schedules so while we would love to be able to give you what you want, when you want it, we require 1 month lead time at least for all special requests. If the box is short on weight, we will add a specialty cut or two (e.g. Osso Bucco, Short Ribs, hamburger patties, hot dogs, etc.) to make up the difference. This is rarely necessary.

We are no longer offering Annual Beef Shares as most of our customers prefer the freedom of buying by the piece, or ordering a Sampler Box or 1/8th Beef in a Box whenever they want.
