Cut from the most tender part of the lamb, loin chops are the most premium steak from a lamb.  Allow the chops to come to room temperature, then season with your favorite herbs and sea salt.  Over high heat, grill or pan sear for 3 minutes on each side until you reach a perfect medium rare (135-140 degrees F) internal temperature.
