Cut from the most tender part of the lamb, loin chops are the most premium steak from a lamb. Much like a beef T-Bone or Porterhouse (except much smaller) with the strip loin on one side of the bone and the tenderloin on the other.
Allow the chops to come to room temperature, then season with your favorite herbs and sea salt. Over high heat, grill or pan sear for 2-3 minutes on each side until you reach a perfect medium rare (135-140 degrees F) internal temperature.
