This is our classic bacon — made from the richly marbled bellies of our slowly grown heritage breed pigs and gently smoked over applewood for a balanced, traditional smoke flavor.
Applewood produces a milder, slightly sweeter smoke than hickory, allowing the flavor of the pork itself to come through. Cook it slowly until the edges are crisp and the fat is beautifully rendered, or use it anywhere you want to add rich, savory bacon flavor.
Great bacon starts with the pork. Heritage breed pigs are known for developing beautiful marbling and flavorful fat, which is one of the reasons we choose to raise them slowly rather than pushing them to finish as quickly as possible.
The result is bacon with plenty of rich pork flavor and fat that renders beautifully in the skillet.
Our heritage breed pigs spend their lives outside in our fields and woods, where they're free to root, forage, explore and wallow.
They naturally forage on grasses, clover, roots, berries, nuts and whatever else they find throughout the seasons. Alongside what they forage, they're supplemented with a nutritionally balanced organic feed made without corn or soy.
We raise them slowly, give them plenty of space, and never use antibiotics, hormones or vaccines.
