Bresaola is a whole muscle charcuterie made from lean beef rump or eye meat. After being carefully trimmed and rubbed with salt and spices, this lean cut of meat is cave aged for multiple months until it's amazing flavor has developed. It's then sliced ultra thinly and packaged.
