Our uncured Pancetta is made from the rich belly of our pasture-raised heritage pigs and prepared in the traditional Italian style. Seasoned with spices, white pepper and red wine, it's savory, rich and intensely flavorful β the kind of ingredient where a small amount can transform an entire dish.
Pancetta is Italian-style pork belly that's seasoned rather than smoked like traditional American bacon. The result is a rich pork flavor complemented by its distinctive seasonings, making it an incredibly useful ingredient to keep on hand.
Dice it and slowly brown it in a skillet to render the flavorful fat, then build the rest of your dish right in the same pan.
Use it in pasta sauces, soups and stews, risotto, beans, greens, roasted vegetables or potatoes. It's also delicious crisped and scattered over eggs, salads or vegetables.
Although both come from pork belly, they bring different flavors to the kitchen. Our bacon is smoked, while Pancetta is traditionally seasoned without smoke, allowing the pork, red wine and spices to take center stage.
Our heritage breed pigs spend their lives outside in our fields and woods, where they're free to root, forage, explore and wallow.
They naturally forage on grasses, clover, roots, berries, nuts and whatever else they find throughout the seasons. Alongside what they forage, they're supplemented with a nutritionally balanced organic feed made without corn or soy.
We raise them slowly, give them plenty of space, and never use antibiotics, hormones or vaccines.
