70/30 Ground Beef

If you want the richest, juiciest Ground Beef we offer, this is it. Our 70/30 Ground Beef combines approximately 70% lean beef with 30% fat for incredible beef flavor, moisture and browning.

What makes this blend especially good is the beef that goes into it. We make it from a flavorful combination of Brisket, Chuck and Short Rib — cuts prized for the deep beef flavor and richness they bring to a burger.

The higher fat content makes this an outstanding choice for smash burgers, where the beef can develop deeply browned, crisp edges while remaining juicy inside. It's also excellent for tacos, meatballs, meatloaf and other dishes where you want the extra richness of a higher-fat Ground Beef.

100% Grass-Fed & Grass-Finished

Like all of our beef, this comes from cattle raised slowly on pasture for more than 36 months, often up to 42 months. Our cattle are 100% grass-fed and grass-finished — never grain-fed — and graze the diverse forage growing across our zero-spray pastures.

We raise our cattle without antibiotics, hormones or vaccines and give them the time needed to mature and finish naturally on grass. Our beef is dry-aged, expertly butchered locally, vacuum sealed and flash frozen while very fresh.

Cooking 70/30 Ground Beef

Because this blend contains more natural beef fat, you generally won't need to add cooking oil. For burgers, a hot cast-iron skillet or griddle lets the fat render while developing a deeply browned crust. For other recipes, simply drain any rendered fat if the dish doesn't require all of it — or save that flavorful beef fat for another use.
