Our Beef Scrapple brings together beef, nutrient-dense organ meats, beef bone broth and beef fat with organic oat flour, organic buckwheat and simple seasonings. Slice it and crisp it in a skillet for a savory breakfast with a golden crust and a tender center.

Organ meats have long been valued in traditional cooking. Here, they’re incorporated into a familiar breakfast favorite alongside beef and bone broth—an approachable way to bring more variety to your plate.
This recipe uses organic oat flour instead of the cornmeal found in our Pork Scrapple. Organic buckwheat rounds out the blend, creating a hearty loaf that’s easy to slice and pan-fry.
It’s made without corn or soy.
Our cattle are raised on chemical-free pastures, moved to fresh grass daily, and fed a 100% grass and forage diet from start to finish. We give them more than three years to mature and raise them without antibiotics, hormones or vaccines.
Slice the chilled loaf approximately ¼ inch thick. Heat a little tallow, butter or lard in a skillet over medium heat, then add the slices without crowding the pan.
Let the first side develop a golden crust before turning gently. Cook the second side until browned and heat thoroughly throughout.
Serve alongside eggs, or enjoy with maple syrup, apple butter or ketchup.
