The centerpiece for a memorable meal!  Our "BRT" (Boneless, Rolled, & Tied) Leg of Lamb is deboned for easier cooking.  Rub with your favorite herbs and oil, then roast in a 425-450 degree oven for 15-20 minutes, then reduce heat to 325 and continue cooking until the internal temperature of the roast reaches 130-150, depending on your preferred doneness.  Let rest for 10-20 minutes before carving.
