If organ meats aren't usually your thing, Turkey Hearts might surprise you.
Unlike liver, Turkey Hearts have a firm, meaty texture and rich, savory flavor. Think of them less like a traditional organ meat and more like small, intensely flavorful pieces of dark turkey meat.
They're also remarkably versatile and don't require complicated preparation, making them an easy way to try something a little different.
Turkey Hearts are excellent quickly seared in a hot skillet, threaded onto skewers and grilled, or sautéed with butter, garlic and herbs. They can also be sliced and added to stir-fries, soups, stews or stuffing.
The key is simply choosing your cooking method: cook them quickly over higher heat for a tender, meaty bite, or give them plenty of time in a slow-cooked dish until tender.
Heart is naturally rich in protein and provides important nutrients including iron, zinc, selenium and several B vitamins. It's an easy way to incorporate more of the animal into your meals while getting something genuinely enjoyable to eat.

Our turkeys are raised on pasture and moved onto fresh grass twice each day, where they forage naturally on grasses, clover, insects and other plants.
Alongside what they forage on pasture, they're supplemented with a nutritionally balanced organic feed made without corn or soy.
What's growing beneath their feet matters too. Our pastures are 100% zero spray—we don't use herbicides, pesticides or fungicides, including sprays approved for organic production. We also never use antibiotics, hormones or vaccines.
Our turkeys are harvested right here at Tussock Sedge Farm using calm, low-stress handling from beginning to end.
