This roast offers butter soft marbling, amazing flavor, and an incredible presentation in the middle of your table. The rule of thumb for how much to serve is 2 people per "rib" or 1 pound per person. Easy cooking instructions are below:
The night before cooking, rub the roast generously with any mixture of fresh herbs, garlic, lemon, and salt/pepper. The next day, let the roast sit at room temperature for at least an hour before heating the oven to 450 degrees. Place meat bone-side down in a roasting pan or on a rimmed sheet pan. Roast for 20 minutes, then turn heat down to 350 degrees and cook 18 minutes a pound for rare, 20 minutes for medium-rare and 22 minutes per pound for medium. Let rest for at least 15 minutes before carving.
