The Bistro Filet is difficult to extract during butchering, but the time required is worth it. This cut is essentially a miniature Whole Filet Mignon. Weighing approximately 3/4 of a pound, it can be pan seared on each side before slicing into incredibly tender medallions that melt in your mouth. Limited availability as a whole cow only yields 2 of these steaks.
