Simple Slow-Cook Method:
Season generously with salt and pepper, sear on all sides until browned, then add broth, vegetables, and herbs. Cover and cook at 300°F for 3–4 hours or until fork-tender.  In a crockpot, simply cook on low for at least 8-10 hours instead.
