Old laying hens have been prized for generations as the most flavorful chicken.

In our commitment to sustainability, our laying hens become deeply flavorful and nourishing food when they are no longer providing eggs. These hens tend to be about 3 years old and have worked hard to provide hundreds of nutrient dense eggs during their life. We honor their life by allowing them to nourish us, even when they no longer produce eggs.

These birds are best when roasted slowly in the oven until golden brown, then covered with water in a pot and slowly simmered until the meat falls away from the bones. This process will take hours but will result in the most delicious meat and broth you've ever tasted. Use as a base for chicken soup, stew, pot pie, or just drink the bone broth and use the meat however you prefer.

Just like our pasture raised broilers, these birds are also exclusively corn free, soy free, antibiotic free, hormone free, and raised on grass throughout their lives.
