Ready to eat and full of flavor!  Made in small batches using our 100% grass fed beef brisket that is brined, rubbed with Redmond Sea Salt and spices, then slowly smoked with hickory wood until tender and juicy.  The easiest way to describe the flavor is like a cross between corned beef and traditional smoked brisket.  It's rich, tender, and delicious!

After being requested for MANY years, it's now here....ready to eat Hickory Smoked Beef Pastrami!  If you've ever had "burnt brisket ends" at a BBQ place, just wait until you've tried pastrami ends, they're incredible and easy to prepare on the smoker (or an oven if needed).

Ingredients

  • Pastrami Ends, thawed
  • Your favorite BBQ sauce - enough to coat the pastrami ends very liberally
  • Tallow or Lard - melted, enough to evenly coat the pastrami ends

Procedure

  1. Place pastrami ends in a large disposable tray or oven safe dish if using the oven. Mix in barbecue sauce and tallow or lard, and toss to thoroughly coat pieces.
  2. Place tray in smoker (or oven) and cook at 225 degrees until pieces darken and become crisp around the edges, 2 to 4 hours.
  3. Remove from smoker or oven, let cool for 10 minutes, then serve, with additional barbecue sauce, if desired.
