A very unknown cut, the Merlot Steak is much like the Flank....lean with a strong beef flavor, yet very tender when properly prepared. The name "Merlot" comes from its velvety texture. Over high heat (either in a cast iron pan or on a grill), cook for approximately 2-3 minutes per side until you reach a perfect medium-rare inside.
