These ribs come from the upper portion of the rib cage near the loin, giving them their characteristic curved shape and tender meat.
Smoke them over wood, cook them slowly on the grill or roast them gently in the oven until tender. Finish with your favorite barbecue sauce, glaze or dry rub — or keep the seasoning simple and let the pork take center stage.
They're perfect for summer cookouts, game-day meals or an easy weekend dinner when you have time to let them cook slowly.
Our slowly grown heritage breed pigs develop flavorful meat and beautiful fat, both of which are especially valuable in a cut like ribs. During a long cook, that fat renders and helps keep the meat rich and flavorful.
Our heritage breed pigs spend their lives outside in our fields and woods, where they're free to root, forage, explore and wallow.
They naturally forage on grasses, clover, roots, berries, nuts and whatever else they find throughout the seasons. Alongside what they forage, they're supplemented with a nutritionally balanced organic feed made without corn or soy.
We raise them slowly, give them plenty of space, and never use antibiotics, hormones or vaccines.
