remind people all of the time, do not trim the fat,...EAT IT. The fat from slowly raised pigs on pasture is amazingly delicious and chock full of Vitamin D. Pan sear or grill for a few minutes on each side for a perfect chop. Best cooked to medium with a little pink in the middle.
