A pork shoulder can be shredded for pulled pork or sliced for traditional roast pork.  We keep a fat cap on the roast that renders slowly during cooking, helping to ensure that the meat remains moist.

Our 100% pasture raised pork from heritage breed pigs is nothing like "the other white meat".  In fact, our pork has a deep red color and beautiful marbling throughout.  THIS is how pork is meant to be. 

Try this foolproof recipe for incredible sliced pork!

Ingredients

  • 1 pork shoulder
  • olive oil
  • salt and freshly ground black pepper
  • 3 large garlic cloves, minced
  • 1/2 teaspoon dried tarragon, or other herbs
  • 1/4 teaspoon dried thyme

Instructions

  • Preheat oven to 425ºF. Put roast on a rack in a rimmed baking pan, fatty side up. Rub the roast with olive oil and chopped garlic. Season generously with salt and pepper, and sprinkle with the dried herbs.
  • Roast it for 20 minutes, then reduce the heat to 300ºF and roast until the internal temperature is at least 145ºF. Figure about 30 minutes or a little longer per pound.
  • When done, let it rest for 5 to 10 minutes before serving.
