St. Louis Style Ribs are a classic barbecue cut with plenty of meat, rich pork flavor and the perfect balance of meat and fat for long, slow cooking.
They're cut from the spare rib portion and trimmed into a more even, rectangular rack, which makes them especially easy to season, smoke, grill and slice for serving.
These ribs really shine when they're given time. Smoke them slowly over wood, roast them in the oven or cook them over indirect heat on the grill until the meat becomes tender and begins to pull cleanly from the bone.
Use your favorite dry rub, finish them with barbecue sauce, or keep the seasoning simple and let the flavor of the pork do most of the work.
St. Louis Style Ribs come from lower on the rib cage than Baby Back Ribs and tend to have a little more fat and connective tissue. That makes them especially flavorful and well suited to smoking and slow cooking.
Baby Backs are generally smaller and a little leaner, while St. Louis Ribs offer the rich, substantial barbecue experience many rib lovers prefer.
Our heritage breed pigs spend their lives outside in our fields and woods, where they're free to root, forage, explore and wallow.
They naturally forage on grasses, clover, roots, berries, nuts and whatever else they find throughout the seasons. Alongside what they forage, they're supplemented with a nutritionally balanced organic feed made without corn or soy.
We raise them slowly, give them plenty of space, and never use antibiotics, hormones or vaccines.
