The Tenderloin is a small muscle that does very little work, which is why it stays so naturally tender. Unlike larger pork roasts that benefit from hours of slow cooking, Tenderloin cooks quickly and is at its best when it isn't overcooked.
Season it simply and sear the outside before finishing gently in the oven, grill it whole, or slice it into thick medallions for an exceptionally quick skillet dinner.
Its mild flavor also makes it an excellent canvas for fresh herbs, garlic, mustard, pan sauces, marinades or your favorite dry rub.
Our heritage breed pigs spend their lives outside in our fields and woods, where they're free to root, forage, explore and wallow.
They naturally forage on grasses, clover, roots, berries, nuts and whatever else they find throughout the seasons. Alongside what they forage, they're supplemented with a nutritionally balanced organic feed made without corn or soy.
We raise them slowly, give them plenty of space, and never use antibiotics, hormones or vaccines.
