Elmer & Sarah’s Plain Kefir begins with grass-fed A2/A2 milk and is carefully cultured to create a rich, refreshingly tangy dairy drink with a smooth, pourable consistency.
A2/A2 milk naturally contains only the A2 type of beta-casein protein rather than a combination of A1 and A2 beta-casein. Some people specifically seek out A2/A2 dairy because they find it preferable to conventional milk. This kefir combines that distinctive milk with traditional culturing, creating a flavorful and versatile cultured dairy product.
Its consistency falls between milk and traditional yogurt. It is smooth enough to drink by the glass but has more body, richness and cultured flavor than ordinary milk.
Kefir and yogurt are both cultured dairy foods, but they are not quite the same. Traditional yogurt is generally thick enough to eat with a spoon, while kefir remains pourable and is intended for sipping, blending and adding to recipes.
The culturing process gives kefir its characteristic tang and complex flavor. This plain variety has no added sweetness competing with the dairy, allowing the flavor of the grass-fed A2/A2 milk and cultures to come through.
Drink it cold on its own, or lightly sweeten it with honey or maple syrup. Its creamy tang pairs especially well with berries, peaches and other fruit.
Because it is plain, it is equally useful in sweet and savory recipes. Its natural acidity and creamy consistency make it an excellent addition to baked goods, dressings, dips and marinades.
