Looking for something AMAZING?!  This is it.  If you think that our regular pork chops are delicious, just wait until you try these.  The smoking process adds a whole other dimension of flavor and the buttery fat begins to render just a little bit, getting even softer.  It's also simple to prepare these  ---  allow the thawed meat to sit at room temperature for at least 30 minutes.  Then melt some butter, lard, or bacon fat in a cast iron pan over medium-low heat until sizzling, before quickly searing the chop for about 2-3 minutes per side.  All you're looking to do is warm the meat and give it a slight sear.  Do not overcook.  Slice, serve, and ENJOY!  Remember,....eat the fat!
