100% Grass Fed Lamb: Leg of Lamb

Sheep grazing on green pasture

Slowly Grown Β· Truly Nourishing

Exceptional Lamb Begins with Grass

Tender, flavorful 100% grass-fed and grass-finished Lamb from a local shepherd raising Katahdin hair sheep. Raised on pasture and never grain-finished, this Lamb brings something special to everyday dinners and celebratory meals alike.

Grass from Start to Finish

Pasture plants and forage nourish the flock, with grass hay during colder weather. Never fed grain, corn or soy.

A Local Partnership

Our Lamb is raised by a local shepherd rather than here at Tussock Sedge Farm, bringing another pasture-based specialty to your table.

Simple to Make Special

Sear Chops, roast a Leg of Lamb, or try Ground Lamb in burgers and meatballs. Garlic, rosemary and a little salt make wonderful companions.

About Our Grass-Fed Lamb

A Pasture-Based Life

Katahdins are hardy hair sheep that naturally shed their winter coats. Rotational grazing gives the flock fresh forage while allowing grazed areas to rest. Shelter offers protection during harsh weather, and free-choice minerals and sea salt complement their forage diet.

Chops for a Special Supper

Pat dry, season simply, and sear in a hot skillet or on the grill. Add garlic and rosemary, then rest before serving. Thick Chops benefit from a gentler finish after browning.

A Roast Worth Gathering Around

Rub a Leg of Lamb with olive oil, garlic, herbs and salt. Roast with a thermometer to guide doneness, then rest and slice across the grain. Serve with potatoes and seasonal vegetables.

Ground Lamb for Everyday Meals

Make burgers, meatballs or kofta with cumin, garlic and herbs. Try it in shepherd’s pie or a hearty tomato sauce. A spoonful of yogurt sauce adds a refreshing finish.

New to Cooking Lamb?

Start with Ground Lamb in a recipe you already enjoy, or prepare Chops much as you would a Steak. Lamb pairs beautifully with rosemary, thyme, garlic, lemon and mint. Begin with a few simple seasonings so you can appreciate the flavor of the meat itself.

Cook with Care

Thaw in the refrigerator and use a meat thermometer. Cook whole cuts such as Chops and Leg of Lamb to 145Β°F, followed by at least a 3-minute rest. Cook Ground Lamb and fresh Lamb Sausage to 160Β°F. Stewing cuts need longer, gentle cooking to become tender.

Make Room for Something Special

From herb-seasoned burgers to sizzling Chops and a roast shared with family, grass-fed Lamb brings delicious variety to your table. Try a familiar recipe with a new cut, or make your next gathering a little more memorable.
