Truly Pasture Raised Heritage Pork: Ham

Slowly Grown • Raised Outdoors • Organic Feed Without Corn or Soy

Heritage breed pig foraging on pasture at Tussock Sedge Farm

Our heritage breed pigs spend their lives outside in our fields and woods, where they're free to root, forage, explore, wallow and simply be pigs.

They naturally forage on grasses, clover, roots, berries, nuts and whatever else they find throughout the seasons. Alongside what they forage, they're supplemented with a nutritionally balanced organic feed made without corn or soy.

We raise them slowly, give them plenty of space, and never use antibiotics, hormones or vaccines. It takes considerably more time and work than raising pigs conventionally—but the result is beautifully marbled pork with rich, old-fashioned flavor.

How We Raise Our Pigs

Pork Raised Differently

There are easier and less expensive ways to raise pigs. We choose to raise ours differently because we believe how an animal lives, what it eats and how it's handled all matter.

Outside Where Pigs Belong

Our heritage breed pigs spend their lives outdoors with room to move, root, forage, explore and wallow. Depending on the season, you'll find them grazing through our fields, rooting along the edges of the woods or stretched out in the shade.

We don't raise pigs this way because it's the easiest way to do it. We do it because these natural behaviors are an important part of giving our animals a good life.

What They Eat Matters

Pigs are natural omnivores and enthusiastic foragers. Ours eat grasses, clover, roots, berries, nuts and other foods they find throughout the farm.

Alongside what they forage, we provide a nutritionally balanced organic supplemental feed made without corn or soy. We choose their feed carefully because what an animal eats matters to us just as much as where it's raised.

Pastures We Don't Spray

The ground our pigs live and forage on is just as important to us as their supplemental feed. Our pastures are 100% zero spray—we don't use herbicides, pesticides or fungicides, including products approved for organic production.

When our pigs put their noses into the soil, dig for roots or graze the plants growing around them, we want to know exactly how that land has been managed.

Heritage Breeds, Raised Slowly

We choose heritage breed pigs and give them the time and space to grow naturally. They aren't raised with the goal of producing pork as quickly or cheaply as possible.

That slower approach produces pork with beautiful marbling, rich flavor and the character that made traditional pork worth getting excited about in the first place.

More Than Just Pork Chops & Bacon

Raising an animal well also means valuing the whole animal. That's why you'll find everything from familiar favorites like Bacon, Pork Chops and Sausage to Roasts, Ribs, Ground Pork and traditional cuts that may be less familiar.

Different cuts need different cooking methods, but some of the least familiar pieces can become some of the best meals. Throughout our store, we'll help explain what each cut is and the easiest ways to prepare it.

Slowly Grown — Truly Nourishing

Good pork begins long before it reaches the butcher. It begins with the animal, the land beneath its feet, the food it eats and the way it's cared for every day.

That's the kind of pork we want to raise for our own family—and the kind we're proud to offer yours.
