Truly Pasture Raised Heritage Chicken: Sausage

Pasture-raised chickens at Tussock Sedge Farm

Slowly Grown Β· Truly Nourishing

Fresh Pasture. Slow Growth. Remarkable Chicken.

Bring rich flavor to the table with our slow-growing heritage chickens. Raised for around three months, with fresh pasture twice daily once outdoors, they have time to forage and mature.

Grass Under Their Feet

Moving shelters brings new ground to peck, scratch and explore, with grasses, clover and insects to forage.

Carefully Chosen Feed

Organic supplemental feed made without corn or soy supports their nutritional needs alongside pasture forage.

Make Dinner Your Own

Roast a whole bird, grill your favorite pieces, or turn Ground Chicken into an easy weeknight meal.

How We Raise Our Chickens

Daily Care, from Brooder to Pasture

Young chicks begin in a protected brooder before moving outdoors. Our team tends each flock with feeding, watering, health checks and calm handling. Frequent pasture moves distribute natural fertility while giving previously grazed ground time to recover.

What Goes into Their Feed

Their balanced ration includes field peas and barley, plus probiotics, vitamins, minerals and Redmond Real Salt. Pasture provides opportunities to forage; supplemental feed supplies essential nutrition as they grow.

Choose Your Next Chicken Dinner

A Whole-Bird Dinner

Roast with herbs and seasonal vegetables, or spatchcock for more even cooking. Save leftover meat for sandwiches, salads, tacos or soup.

Dark-Meat Favorites

Thighs, Drumsticks and Leg Quarters are wonderful roasted, grilled or gently braised. Pair with a simple seasoning or your favorite marinade.

Weeknight Possibilities

Use Breasts, Cutlets or Tenderloins for quick meals. Try Ground Chicken in burgers, meatballs, lettuce wraps or a skillet with vegetables.

A Little Care in the Kitchen

Thaw in the refrigerator and pat the skin dry before roasting for better browning. Use a meat thermometer to check doneness to avoid overcooking. Rest before carving, and avoid cooking lean Breast meat longer than necessary.

Save the Bones for Another Meal

Turn a roasted carcass, Backs and Necks into homemade stock. Cover with water, add vegetables and herbs, and simmer gently. Chicken Feet can add gelatin and body to the finished broth. Strain, cool promptly, and refrigerate or freeze for soups, sauces and future dinners.

A Sunday Roast. A Weeknight Supper. A Pot of Soup.

Good chicken earns its place in all kinds of meals. Start with a favorite cut, try a new recipe, and enjoy gathering around the table.
