Extra Small Whole Chicken — Pasture Raised Heritage Breed (Corn & Soy Free)

Our Extra Small Whole Chickens weigh less than 2.5 pounds and are a wonderfully versatile size for smaller households, couples, or anyone who wants a whole pasture-raised chicken without a lot of leftovers.

These aren't conventional chickens raised as quickly as possible. We raise slow-growing heritage breed birds outdoors on pasture, moving them to fresh ground every day where they can forage through grass and clover and express their natural behaviors. They are raised at nature's pace using regenerative farming practices that prioritize the health of the animals, the soil, and the land.

Our chickens are fed a carefully selected corn-free and soy-free diet to supplement what they forage on pasture. They are raised without vaccines, antibiotics, or added hormones and without the shortcuts common in industrial poultry production.

The difference is something you can taste. Heritage breed chickens develop firmer, more natural texture, rich flavor, and beautiful skin that crisps exceptionally well when roasted or grilled. This is chicken raised the old-fashioned way—slowly, outdoors, and with care.

A Small Bird With Plenty of Possibilities

Don't let the smaller size fool you. Roast it whole for a simple dinner, smoke it, or spatchcock and grill it for beautifully crisp skin and quicker, more even cooking. Its smaller size also makes it a great choice when you want a freshly cooked whole chicken without several days of leftovers.

And don't throw away the bones. After dinner, use the carcass to make a small batch of nourishing homemade chicken stock or bone broth. Cover the bones with water, add a splash of apple cider vinegar, and simmer low and slow before straining.

Be sure to look for the two little "oysters" tucked along the back of the chicken near the thighs. They're exceptionally tender, flavorful morsels traditionally reserved for the person lucky enough to carve the bird.
